Method
- Preheat oven to 350°F. Grease a 9×9 or 9×13 baking dish.
- In a large bowl, mix cream cheese, cottage cheese, sour cream, garlic powder, onion powder, and pepper until smooth.
- Stir in shredded chicken and ½ cup cheddar cheese.
- Spread mixture into baking dish. Top with remaining ½ cup cheddar cheese.
- In a small bowl, combine crushed crackers and melted butter. Sprinkle evenly over casserole.
- Bake uncovered for 25–30 minutes until bubbly and golden brown.
- Rest 5–10 minutes. Garnish and serve.
Notes
Use rotisserie chicken for a shortcut. Add 1 cup of frozen peas or broccoli for extra veggies. For a gluten-free version, use gluten-free crackers.
