Rustic Plum Cake

Ingredients
  

  • 1 ½ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ cup unsalted butter softened
  • ¾ cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup sour cream or plain yogurt
  • 2 –3 cups fresh plums pitted and sliced
  • Powdered sugar for dusting

Method
 

  1. Heat oven to 350°F (175°C). Grease and line a 9-inch springform pan.
  2. In a bowl, whisk flour, baking powder, baking soda, and salt.
  3. In another bowl, cream butter and sugar until fluffy. Add eggs one at a time, then vanilla.
  4. Stir in sour cream. Gradually add dry ingredients until just combined.
  5. Spread batter into the pan. Arrange sliced plums on top, pressing gently into the batter.
  6. Bake 40–45 minutes, until golden and a toothpick comes out clean.
  7. Dust with powdered sugar. Serve warm or at room temperature.

Recipe Notes

  • Best made with ripe but firm plums to avoid excess liquid.
  • Store at room temp up to 2 days, or refrigerate up to 5.
  • Freezes well — wrap tightly and store up to 2 months.
