Ingredients
  

  • 1 cup rolled oats
  • ¼ cup pumpkin puree
  • ¼ cup peanut butter (or almond butter)
  • 2 tbsp honey (or maple syrup for vegan)
  • ½ tsp pumpkin pie spice
  • ¼ tsp cinnamon
  • ¼ cup mini chocolate chips (optional)
  • ¼ cup ground flaxseed (for added fiber)
  • pinch of salt

Method
 

  1. Mix Ingredients: In a medium bowl, combine rolled oats, pumpkin puree, peanut butter, honey, pumpkin pie spice, cinnamon, and ground flaxseed. Stir until well combined.
  2. Add Chocolate Chips: Fold in the mini chocolate chips (if using) and mix thoroughly.
  3. Form into Bites: Using your hands or a spoon, form the mixture into 1-inch balls.
  4. Chill: Place the bites on a lined baking sheet and refrigerate for at least 30 minutes to firm up.
  5. Serve: Enjoy straight from the fridge or keep stored in an airtight container for up to a week.
