No-Bake Peanut Butter Oat Energy Bites

No-bake peanut butter oat energy bites made with pantry staples. A quick, no-fuss after-school snack ready in 10 minutes.

Ingredients
  

  • 2 cups old-fashioned rolled oats
  • 1 cup creamy peanut butter
  • ½ cup honey or maple syrup
  • ½ cup mini chocolate chips
  • ½ cup shredded coconut or ground flaxseed optional
  • 1 tsp vanilla extract
  • Pinch of salt

Method
 

  1. In a large bowl, stir together peanut butter, honey, and vanilla until smooth.
  2. Stir in oats, salt, and optional coconut or flaxseed. Fold in chocolate chips last.
  3. Scoop about 1 Tbsp of mixture, roll into balls. Place on a parchment-lined tray.
  4. Refrigerate 20 minutes until firm. Store in airtight container in fridge.

  • Swap peanut butter with almond or sunflower butter for nut-free.
  • Add raisins, chopped nuts, or dried cranberries for variety.
  • Freeze for up to 2 months and thaw before serving.
