Method
- In a large bowl, stir together peanut butter, honey, and vanilla until smooth.
- Stir in oats, salt, and optional coconut or flaxseed. Fold in chocolate chips last.
- Scoop about 1 Tbsp of mixture, roll into balls. Place on a parchment-lined tray.
- Refrigerate 20 minutes until firm. Store in airtight container in fridge.
