Jam Galette

Make a rustic and delicious Jam Galette with just a handful of ingredients! This easy-to-make dessert combines a flaky, buttery crust.

Ingredients
  

  • 1 ¼ cups all-purpose flour
  • ½ tsp salt
  • 1 tbsp granulated sugar
  • ½ cup 1 stick unsalted butter, cold and cubed
  • 3 –4 tbsp ice water
  • ½ cup jam or preserves blackberry, raspberry, strawberry, etc.
  • 1 egg for egg wash
  • 1 tbsp coarse sugar optional, for sprinkling on crust

Method
 

  1. In a bowl, whisk flour, salt, and sugar.
  2. Cut in butter with a pastry cutter or fork until mixture resembles coarse crumbs.
  3. Add ice water, 1 tbsp at a time, mixing until dough just holds together.
  4. Form into a disk, wrap, and chill 30 minutes.
  5. Heat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  6. On a lightly floured surface, roll dough into a 10–12 inch circle.
  7. Transfer to baking sheet.
  8. Spread jam in the center, leaving a 2-inch border.
  9. Fold dough edges up and over filling, pleating as you go.
  10. Brush crust with egg wash, sprinkle with coarse sugar.
  11. Bake 35–40 minutes until golden and bubbling.
  12. Cool 10 minutes before slicing. Serve warm or at room temp.

Recipe Notes

  • Use any jam you love — homemade or store-bought.
  • For a richer twist, spread a thin layer of cream cheese under the jam before folding.
  • The dough can be made ahead: refrigerate for 2 days or freeze for up to 1 month.
  • Swap fillings seasonally: fig jam in fall, cranberry jam for holidays, peach in summer.
