Ingredients
  

  • 1 1/4 cups all-purpose flour
  • 1/4 tsp salt
  • 1 tbsp sugar
  • 1/2 cup cold unsalted butter diced
  • 3-4 tbsp ice water
  • 1/2 cup fruit jam your choice of flavor
  • 1 egg for egg wash
  • 1 tbsp coarse sugar optional, for sprinkling

Instructions
 

  • Make the Dough:
  • In a large mixing bowl, combine flour, salt, and sugar. Add the cold, diced butter and cut it into the flour using a pastry cutter or your fingers until the mixture resembles coarse crumbs. Gradually add ice water, one tablespoon at a time, mixing until the dough just comes together. Form the dough into a disc, wrap it in plastic wrap, and chill for 30 minutes.
  • Preheat and Prepare:
  • Preheat your oven to 375°F (190°C). Roll out the chilled dough on a floured surface into a 12-inch circle. Transfer the dough to a parchment-lined baking sheet.
  • Add the Jam:
  • Spread the fruit jam evenly over the center of the dough, leaving a 2-inch border around the edges. Fold the edges of the dough over the jam, pleating as you go, to create a rustic crust.
  • Egg Wash and Sprinkle:
  • In a small bowl, beat the egg and brush it over the crust. Sprinkle the crust with coarse sugar for added texture and sweetness.
  • Bake:
  • Bake for 30-35 minutes or until the crust is golden brown and the jam is bubbling. Let cool for 10 minutes before serving. Enjoy warm or at room temperature.
