Prep pan – Line a baking sheet with parchment paper.
Mix yogurt base – In a bowl, stir together yogurt, honey (or maple syrup), and vanilla until smooth.
Spread – Pour yogurt mixture onto the lined baking sheet and spread evenly to about ½ inch thick.
Top it off – Sprinkle chopped strawberries and mini chocolate chips evenly over the yogurt.
Freeze – Place in the freezer for at least 3 hours, or until firm.
Break into pieces – Once frozen, break into bark-style pieces. Keep stored in a freezer-safe container until ready to enjoy.
