Easy Pumpkin Spice Granola Bark Recipe

Ingredients
  

  • 1 cup semi-sweet chocolate chips, melted
  • 1/2 cup granola (I used my homemade version, but store-bought works too)
  • 1/4 cup canned Libby's pumpkin
  • 1/2 tsp cinnamon

Method
 

  1. Melt 1 cup of semi-sweet chocolate chips by microwaving in 30-second intervals, stirring in between, until smooth. Pour the melted chocolate onto the prepared cookie sheet, spreading it into an even layer with a spatula.
  2. In a small bowl, mix ½ cup granola, ¼ cup canned pumpkin, and ½ teaspoon cinnamon until well combined. This creates a flavorful pumpkin mixture that will sit on top of the chocolate.
  3. Using a spoon, drop spoonfuls of the granola-pumpkin mixture onto the melted chocolate. Press the mixture gently into the chocolate as you go along, ensuring it sticks well.
  4. For added texture and sweetness, sprinkle raisins on top of the chocolate and press them in carefully to fill any gaps. Then, sprinkle a little sugar over the entire surface of the bark for an extra touch of sweetness.
  5. Place the cookie sheet in the fridge and chill for 1-2 hours, or until the chocolate has fully set.
  6. Once firm, break the bark into pieces and enjoy!

Notes

You can customize this bark by using different types of dried fruits or nuts for extra crunch. Chopped almonds or cranberries would work beautifully with the pumpkin flavor.
