In a small bowl, whisk together mayonnaise, pickle relish, mustard, vinegar, paprika, onion powder, and garlic powder. Cover and refrigerate for at least 30 minutes to let the flavors blend.
Slice the extra bottom bun from a second burger bun to create the middle bun layer. Lightly toast all buns for that classic fast-food texture.
Divide the ground beef into two thin patties (about ⅛ pound each). Season with salt and pepper. Cook on a hot skillet or griddle for 2-3 minutes per side until browned and cooked through.
Spread Big Mac sauce on the bottom and middle bun layers.
