Ingredients
  

For the Salad:
  • 1 large cucumber diced
  • 1 cup cherry tomatoes halved
  • ½ red onion finely chopped
  • ½ cup Kalamata olives sliced
  • ½ cup feta cheese crumbled
  • ¼ cup fresh parsley chopped
For the Dressing:
  • 3 tbsp extra virgin olive oil
  • 2 tbsp fresh lemon juice
  • 1 garlic clove minced
  • 1 tsp dried oregano
  • ½ tsp salt
  • ¼ tsp black pepper

Method
 

  1. In a large mixing bowl, combine the diced cucumbers, cherry tomatoes, red onion, olives, feta cheese, and parsley. Toss to evenly distribute the ingredients.
  2. In a small bowl or jar, whisk together the olive oil, lemon juice, minced garlic, oregano, salt, and pepper.
  3. Drizzle the dressing over the salad and toss gently to coat all the ingredients.
  4. Let the salad sit for about 5 minutes to absorb the flavors, then serve fresh!
