Ingredients
  

Meatloaf:
  • 2 lbs ground beef 80/20
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1 cup breadcrumbs
  • 2 large eggs
  • ½ cup milk
  • ¼ cup ketchup
  • 1 tbsp Worcestershire sauce
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp dried thyme
  • ½ tsp dried parsley
Glaze:
  • cup ketchup
  • 2 tbsp brown sugar
  • 1 tbsp mustard

Method
 

  1. Preheat oven to 375°F (190°C). Lightly grease a loaf pan or line it with parchment paper.
  2. In a large mixing bowl, combine all meatloaf ingredients. Mix until well combined (don’t overmix).
  3. Transfer mixture into the loaf pan and shape it into a loaf.
  4. In a small bowl, mix together all glaze ingredients. Spread evenly over the top of the meatloaf.
  5. Bake uncovered for 50–60 minutes or until the internal temperature reaches 160°F (71°C).
  6. Let it rest for 10 minutes before slicing and serving.

Recipe Notes

  • Use 80/20 ground beef for a juicier meatloaf.
  • You can swap breadcrumbs for crushed crackers or rolled oats.
  • For extra depth of flavor, sauté the onion and garlic before adding them to the meat mixture.
