Method
Make Brownie Batter
- Melt butter and chopped chocolate in a saucepan until smooth.
- Stir in sugar, then whisk in eggs and vanilla.
- Fold in flour, cocoa powder, and salt until just combined.
Bake Brownies
- Preheat oven to 350°F (175°C). Line a 9x13-inch pan with parchment.
- Spread batter evenly and bake 25–30 minutes, until crackly on top but fudgy inside.
- Cool completely, then cut into even squares.
Make Ganache
- Heat cream until simmering. Pour over chopped chocolate and butter. Stir until smooth.
- Chill 30–40 minutes until thick but spreadable.
Assemble Sandwiches
- Spread ganache on one brownie square, top with another to make sandwiches.
- Sprinkle chocolate curls over top for garnish.
Serve
- Chill 30 minutes before serving for neat cuts, or enjoy warm and gooey.

- Best eaten the day of assembly, but can be stored in the fridge up to 3 days.
- For cleaner edges, use a hot knife when cutting.
- Intensify the chocolate flavor by using dark chocolate in both brownies and ganache.
