Chocolate Brownie Sandwiches

Ingredients
  

Brownies
  • 1 cup unsalted butter 2 sticks
  • 8 oz 225 g semi-sweet chocolate, chopped
  • 2 cups granulated sugar
  • 4 large eggs
  • 2 tsp vanilla extract
  • 1 cup all-purpose flour
  • ½ cup unsweetened cocoa powder
  • ½ tsp salt
Ganache Filling
  • 8 oz 225 g semi-sweet chocolate, chopped
  • 1 cup heavy cream
  • 2 tbsp butter
Topping
  • Chocolate curls or shavings

Method
 

Make Brownie Batter
  1. Melt butter and chopped chocolate in a saucepan until smooth.
  2. Stir in sugar, then whisk in eggs and vanilla.
  3. Fold in flour, cocoa powder, and salt until just combined.
Bake Brownies
  1. Preheat oven to 350°F (175°C). Line a 9x13-inch pan with parchment.
  2. Spread batter evenly and bake 25–30 minutes, until crackly on top but fudgy inside.
  3. Cool completely, then cut into even squares.
Make Ganache
  1. Heat cream until simmering. Pour over chopped chocolate and butter. Stir until smooth.
  2. Chill 30–40 minutes until thick but spreadable.
Assemble Sandwiches
  1. Spread ganache on one brownie square, top with another to make sandwiches.
  2. Sprinkle chocolate curls over top for garnish.
Serve
  1. Chill 30 minutes before serving for neat cuts, or enjoy warm and gooey.

Notes

Recipe Notes

  • Best eaten the day of assembly, but can be stored in the fridge up to 3 days.
  • For cleaner edges, use a hot knife when cutting.
  • Intensify the chocolate flavor by using dark chocolate in both brownies and ganache.
