Method
- In a small bowl, mix smoked paprika, garlic, black pepper, and salt. Rub the mixture evenly over both sides of the pork chops.
- Heat a large skillet (cast iron works best) over medium-high heat.
- Add the pork chops and sear for 3–4 minutes per side until golden brown.
- Sprinkle 1 tbsp brown sugar on top of each chop.
- Flip and sear the other side for 1–2 minutes until the sugar melts and caramelizes.
- Transfer the chops to a lined baking sheet.
- Bake at 350°F (175°C) for 10–12 minutes, or until the internal temperature reaches 145°F (63°C).
- Let the pork chops rest for 5 minutes before serving.
- Optional: Drizzle with pan juices for extra flavor!
