Ingredients
  

For the Salad:
  • 1 cup strawberries hulled and sliced
  • 1 cup blueberries
  • 1 cup raspberries
  • ½ cup blackberries
  • ¼ cup pecans or walnuts chopped
  • ¼ cup feta cheese optional
  • 1 tablespoon fresh mint leaves chopped
For the Honey-Lime Dressing:
  • 2 tablespoons honey
  • Juice of 1 lime
  • 1 teaspoon lime zest
  • 1 teaspoon vanilla extract
  • 1 tablespoon olive oil

Method
 

  1. In a small bowl, whisk together honey, lime juice, lime zest, vanilla extract, and olive oil until smooth. Set aside.
  2. In a large bowl, gently combine the strawberries, blueberries, raspberries, and blackberries.
  3. Sprinkle chopped nuts, feta cheese (if using), and fresh mint over the salad.
  4. Pour the honey-lime dressing over the berries and toss gently to coat.
  5. Serve immediately or refrigerate for 10-15 minutes to allow the flavors to blend.
